Mistral Workflows power the entire triage pipeline as a durable, async state machine: Intake Activity captures patient data → Triage Activity calls Mistral AI for severity scoring and priority ranking → Nurse Gate Activity pauses the workflow for human approval on high-risk cases → Doctor Routing Activity assigns approved patients to the correct specialty.
